Gefüllte Zucchini
Gefüllte Zucchini
**Zutaten:**
- 2 große Zucchini
- 100 g Quinoa
- 1 Paprika, gewürfelt
- 1 kleine Zwiebel, gehackt
- 1 Knoblauchzehe, gehackt
- 100 g Kirschtomaten, halbiert
- 50 g Feta-Käse (optional)
- 1 EL Olivenöl
- Salz und Pfeffer nach Geschmack
- Frische Petersilie, gehackt
- Etwas Gemüsebrühe
**Zubereitung:**
1. Quinoa nach Packungsanweisung in Gemüsebrühe kochen und beiseite stellen.
2. Zucchini längs halbieren und das Innere mit einem Löffel aushöhlen, um Platz für die Füllung zu schaffen.
3. In einer Pfanne Olivenöl erhitzen. Zwiebel und Knoblauch anbraten, bis sie weich sind.
4. Paprika und das Innere der Zucchini (klein gehackt) hinzufügen und kurz mitbraten.
5. Tomaten und gekochte Quinoa zur Gemüsepfanne geben, mit Salz und Pfeffer abschmecken.
6. Die Zucchini-Hälften mit der Quinoa-Gemüsemischung füllen und bei Bedarf Feta darüber bröseln.
7. Gefüllte Zucchini in eine Auflaufform setzen und im vorgeheizten Ofen bei 180°C etwa 20-25 Minuten backen, bis die Zucchini weich sind.
8. Mit frischer Petersilie garnieren und servieren.
