Veganer Chickpea Curry
Veganer Chickpea Curry
Zutaten (für 4 Portionen):
2 EL Olivenöl
1 große Zwiebel, gewürfelt
3 Knoblauchzehen, fein gehackt
1 Stück Ingwer (ca. 2 cm), gerieben
1 Dose Kichererbsen (400 g), abgetropft und gespült
1 Dose gehackte Tomaten (400 g)
1 Dose Kokosmilch (400 ml)
2 TL Garam Masala
1 TL Kurkuma
1 TL Kreuzkümmel
1/2 TL Paprikapulver
Salz und Pfeffer nach Geschmack
Frischer Koriander zum Garnieren
Optional: Chili für mehr Schärfe
Zubereitung:
Erhitze das Olivenöl in einem großen Topf bei mittlerer Hitze. Füge die gewürfelte Zwiebel hinzu und dünste sie, bis sie glasig ist (ca. 5 Minuten).
Füge den gehackten Knoblauch und geriebenen Ingwer hinzu und brate sie für weitere 1-2 Minuten an.
Gebe die Gewürze (Garam Masala, Kurkuma, Kreuzkümmel, Paprikapulver) dazu und röste sie kurz mit, bis sie duften.
Füge die gehackten Tomaten hinzu und lasse alles für 5 Minuten köcheln, damit die Tomaten etwas zerfallen.
Gieße die Kokosmilch dazu und rühre um. Lasse das Curry auf niedriger Hitze für 10 Minuten köcheln.
Gib die Kichererbsen dazu und lasse alles weitere 10 Minuten köcheln, bis die Aromen gut verschmolzen sind.
Mit Salz, Pfeffer und Chili abschmecken.
Mit frisch gehacktem Koriander servieren. Dazu passt Reis oder Naan-Brot.
