Zucchini-Nudeln mit Pesto

Zutaten (für 2-3 Portionen):
4 große Zucchini
1 Tasse frisches Basilikum
1/2 Tasse geröstete Pinienkerne
2 Knoblauchzehen
1/4 Tasse Olivenöl
1/4 Tasse Hefeflocken (für einen käsigen Geschmack)
Salz und Pfeffer nach Geschmack
Optional: Cherrytomaten, geriebener veganer Parmesan
Zubereitung:
Zucchini waschen und mit einem Spiralizer in Nudeln verwandeln. Alternativ kannst du einen julienne Schneider verwenden.
Für das Pesto: Basilikum, Pinienkerne, Knoblauch, Hefeflocken, Salz und Pfeffer in einen Mixer oder Food Processor geben.
Während des Mixens langsam das Olivenöl hinzufügen, bis eine cremige Konsistenz entsteht. Abschmecken und bei Bedarf nachwürzen.
Die Zucchini-Nudeln in eine große Schüssel geben und das Pesto darüber verteilen. Alles gut vermengen.
Optional mit Cherrytomaten und veganem Parmesan garnieren.
Sofort servieren, die Zucchini-Nudeln sind am besten frisch.
