Apfel-Raffaello-Cupcakes

Zutaten (für 12 Stück):
2 Eier
120 g Zucker
100 ml Öl
150 g Mehl
1 TL Backpulver
2 Äpfel, gerieben
6 Raffaello, halbiert
200 g Frischkäse
50 g Puderzucker
150 g Schlagsahne
6 Raffaello (zur Deko)
Zubereitung:
Eier und Zucker cremig schlagen, Öl unterrühren. Mehl mit Backpulver mischen und unterheben.
Geriebene Äpfel dazugeben, kurz verrühren. Teig in Muffinförmchen füllen, je einen halben Raffaello hineindrücken.
Bei 180 °C ca. 20–25 Minuten backen. Abkühlen lassen.
Für das Frosting Frischkäse, Puderzucker und zerdrückte Raffaello glatt rühren. Sahne steif schlagen und unterheben.
Cupcakes mit Creme verzieren und mit je einem Raffaello dekorieren.
