Mirabellen-Muffins (ca. 12 Stück)

Zutaten:
300 g frische Mirabellen (entsteint, halbiert)
250 g Mehl
120 g Zucker
1 Päckchen Vanillezucker
2 TL Backpulver
½ TL Natron
1 Prise Salz
2 Eier (Größe M)
120 ml Milch
80 ml Pflanzenöl (z. B. Raps- oder Sonnenblumenöl)
optional: etwas Zimt oder Zitronenabrieb für mehr Aroma
Zubereitung:
Backofen auf 180 °C Ober-/Unterhitze vorheizen und Muffinform mit Papierförmchen auslegen.
Mehl, Backpulver, Natron, Salz und Zucker in einer Schüssel mischen.
In einer zweiten Schüssel Eier, Milch, Öl und Vanillezucker verquirlen.
Flüssige Zutaten zu den trockenen geben und kurz verrühren (nicht zu lange, sonst werden die Muffins zäh).
Teig in die Förmchen füllen, Mirabellenhälften darauf verteilen und leicht eindrücken.
Muffins ca. 20–25 Minuten backen, bis sie goldbraun sind (Stäbchenprobe machen).
Abkühlen lassen und nach Belieben mit Puderzucker bestäuben.
Tipp: Für eine besondere Note kannst du noch gehackte Mandeln oder weiße Schokostückchen unter den Teig mischen.
