Zutaten (4 Portionen):
1 Blumenkohl
250 g Risotto-Reis (Arborio)
1 Zwiebel
100 ml Weißwein
700 ml Gemüsebrühe
50 g Parmesan
2 EL Butter
Salz, Pfeffer
Zubereitung:
Blumenkohl in kleine Röschen zerteilen und kurz blanchieren.
Zwiebel würfeln, in Butter anschwitzen. Reis dazugeben, glasig werden lassen.
Mit Weißwein ablöschen, nach und nach Brühe unter Rühren zugießen.
Blumenkohl untermischen und mitgaren.
Zum Schluss Parmesan und etwas Butter unterheben.→ Cremig servieren, evtl. mit frischen Kräutern.
