Kürbis-Linsencurry mit Kokosmilch

Zutaten (für 4 Portionen):
500 g Hokkaido-Kürbis
200 g rote Linsen
1 Dose Kokosmilch (400 ml)
1 Dose gehackte Tomaten (400 g)
1 Zwiebel
2 Knoblauchzehen
1 EL Currypulver
1 TL Kreuzkümmel
2 EL Öl
Salz, Pfeffer
Koriander frisch (optional)
Zubereitung:
Kürbis würfeln.
Zwiebel & Knoblauch in Öl anschwitzen. Gewürze kurz mitrösten.
Kürbis, Linsen, Tomaten und Kokosmilch zugeben. 20–25 Min. köcheln lassen, bis Linsen weich sind.
Mit Salz, Pfeffer und frischem Koriander abschmecken.👉 Tipp: Mit Reis oder Naan servieren.
