Kürbis-Risotto mit Parmesan

Zutaten (für 4 Portionen):
300 g Risotto-Reis (z. B. Arborio)
500 g Hokkaido-Kürbis
1 Zwiebel
2 EL Olivenöl
150 ml Weißwein (optional, sonst Gemüsebrühe)
800 ml heiße Gemüsebrühe
50 g Butter
60 g frisch geriebener Parmesan
Salz, Pfeffer, Muskat
Zubereitung:
Kürbis würfeln (Hokkaido muss nicht geschält werden).
Zwiebel fein hacken, in Olivenöl glasig dünsten.
Reis zugeben, 2 Minuten anschwitzen. Mit Wein ablöschen.
Nach und nach Gemüsebrühe angießen, unter Rühren köcheln lassen (ca. 20 Min.).
Kürbiswürfel nach 10 Minuten mitgaren.
Zum Schluss Butter und Parmesan einrühren, mit Salz, Pfeffer und Muskat abschmecken.
