Kürbis-Rindfleisch-Gulasch

Zutaten (für 4 Portionen):

  • 600 g Rindergulasch

  • 500 g Kürbis (Hokkaido oder Butternut)

  • 2 Zwiebeln

  • 2 Knoblauchzehen

  • 2 EL Tomatenmark

  • 400 ml Rinderfond

  • 200 ml Rotwein (optional)

  • 2 EL Öl

  • 2 Lorbeerblätter

  • 1 TL Paprikapulver (geräuchert, falls vorhanden)

  • Salz, Pfeffer

Zubereitung:

  1. Fleisch würfeln, in Öl kräftig anbraten, wieder herausnehmen.

  2. Zwiebeln und Knoblauch in Würfel schneiden, im Bratfett glasig anschwitzen. Tomatenmark zugeben und kurz anrösten.

  3. Fleisch zurück in den Topf geben, mit Wein (oder etwas Fond) ablöschen.

  4. Restlichen Fond und Lorbeerblätter hinzufügen, ca. 1,5 Stunden bei niedriger Hitze schmoren lassen.

  5. Kürbis würfeln, nach 1 Stunde ins Gulasch geben und mitschmoren.

  6. Mit Paprika, Salz und Pfeffer abschmecken.
