Cremige Brokkoli-Käse-Suppe

Zutaten (für 4 Personen):
500 g Brokkoli
1 Zwiebel
2 Knoblauchzehen
1 mittelgroße Kartoffel
750 ml Gemüsebrühe
200 ml Sahne oder Kochsahne
150 g geriebener Cheddar oder Gouda
2 EL Butter
Salz, Pfeffer, Muskat
Zubereitung:
Brokkoli in Röschen teilen, Strunk schälen und klein würfeln.
Zwiebel, Knoblauch und Kartoffel schälen und würfeln.
In einem großen Topf Butter erhitzen, Zwiebel und Knoblauch glasig dünsten. Kartoffelwürfel und Brokkolistrunk kurz mit anbraten.
Mit Brühe aufgießen, etwa 15 Minuten köcheln lassen, bis das Gemüse weich ist.
Brokkoliröschen zugeben, weitere 5 Minuten garen.
Alles fein pürieren, Sahne einrühren, Käse zugeben und schmelzen lassen.
Mit Salz, Pfeffer und Muskat abschmecken.
👉 Tipp: Mit gerösteten Brotwürfeln oder Speckchips servieren.
