Klassische Weihnachtsgans mit Rotkohl und Klößen

Weihnachtsgans mit Rotkohl und Klößen

Zutaten (für 6 Personen):

  • 1 Gans (ca. 4–5 kg)

  • Salz, Pfeffer, Majoran

  • 3 Äpfel, 2 Zwiebeln

  • 200 g Backpflaumen

  • 500 ml Geflügelfond

  • 200 ml Rotwein

Zubereitung:

  1. Gans innen und außen waschen, trocken tupfen, mit Salz, Pfeffer und Majoran einreiben.

  2. Äpfel, Zwiebeln und Backpflaumen klein schneiden und die Gans damit füllen, dann mit Küchengarn verschließen.

  3. In den Bräter legen, Fond und Wein angießen, bei 160 °C Umluft ca. 3 Stunden braten. Zwischendurch mit Bratensaft übergießen.

  4. Am Ende Temperatur auf 220 °C erhöhen, damit die Haut knusprig wird.

  5. Mit Rotkohl und Kartoffelklößen servieren.
