Kürbis-Schweinefilet im Baconmantel

Zutaten (für 4 Portionen):
500 g Schweinefilet
300 g Kürbis (z. B. Butternut), in Würfeln
150 g Bacon (Scheiben)
2 EL Olivenöl
100 ml Sahne
1 Zwiebel
1 TL Thymian
Salz, Pfeffer
Zubereitung:
Filet in 4 Stücke schneiden, mit Bacon umwickeln, in Öl rundherum anbraten. Herausnehmen.
Zwiebel würfeln, in der Pfanne anbraten. Kürbiswürfel dazugeben, ca. 10 Minuten garen.
Mit Sahne ablöschen, würzen, köcheln lassen.
Fleisch zurücklegen, bei 160 °C im Ofen ca. 20 Minuten nachgaren.
Mit Kürbis-Sahne-Gemüse servieren.
