Gefüllte Paprika mit Gemüse & Quinoa

Zutaten (2 Personen):
2 große Paprika
100 g Quinoa
1 kleine Zucchini
1 Karotte
1 Tomate
1 Knoblauchzehe
1 EL Olivenöl
Salz, Pfeffer, frische Kräuter (Petersilie, Basilikum)
Zubereitung:
Quinoa waschen, in doppelt so viel Wasser ca. 15 Min. garen. Gemüse klein schneiden.
Zucchini, Karotte und Knoblauch in Olivenöl kurz anbraten, Tomate hinzufügen. Mit Quinoa mischen, würzen.
Paprika oben aufschneiden und entkernen. Mit der Mischung füllen.
In eine Auflaufform setzen, bei 180 °C ca. 25 Min. backen.
👉 Tipp: Wer mag, kann etwas Feta über die Füllung geben.
