Brokkoli-Pesto für Pasta oder Brot

Zutaten (für 1 Glas):
200 g Brokkoli
50 g Parmesan
50 g Pinienkerne oder Walnüsse
1 Knoblauchzehe
75 ml Olivenöl
Salz, Pfeffer, Zitronensaft
Zubereitung:
Brokkoli in Röschen teilen, 4 Minuten in Salzwasser blanchieren, kalt abschrecken.
Pinienkerne ohne Fett rösten.
Alle Zutaten in einem Mixer pürieren, bis eine cremige Paste entsteht.
Mit Salz, Pfeffer und etwas Zitronensaft abschmecken.
In ein Glas füllen, mit Olivenöl bedecken.
👉 Perfekt als Pastasauce, Brotaufstrich oder Dip für Gemüse.
