Gebackene Auberginen mit Kichererbsen & Tomatenfüllung

Zutaten (2 Personen):

  • 2 mittelgroße Auberginen

  • 200 g gekochte Kichererbsen

  • 2 Tomaten

  • 1 kleine Zwiebel

  • 1 Knoblauchzehe

  • 2 EL Olivenöl

  • 1 TL Kreuzkümmel

  • Salz, Pfeffer, Petersilie

Zubereitung:

  1. Auberginen längs halbieren, Fruchtfleisch mit einem Löffel etwas aushöhlen (Schale intakt lassen).

  2. Fruchtfleisch hacken und mit Zwiebel, Knoblauch und Tomatenwürfeln in Olivenöl anbraten. Kichererbsen und Kreuzkümmel hinzufügen. Mit Salz und Pfeffer abschmecken.

  3. Auberginenhälften mit der Mischung füllen, in eine Auflaufform geben und bei 190 °C ca. 30–35 Min. backen.

  4. Mit frischer Petersilie bestreuen.


👉 Tipp: Wer mag, kann etwas Feta oder Tahini darüber geben.
