Gebackene Lachsfilets mit Ofengemüse

Zutaten (2 Personen):

  • 2 Lachsfilets (je ca. 150 g)

  • 1 Zucchini

  • 1 rote Paprika

  • 1 Aubergine

  • 2 EL Olivenöl

  • 1 Knoblauchzehe

  • 1 TL Rosmarin oder Thymian (frisch oder getrocknet)

  • ½ Zitrone (Saft)

  • Salz, Pfeffer

Zubereitung:

  1. Backofen auf 200 °C (Umluft 180 °C) vorheizen.

  2. Gemüse in mundgerechte Stücke schneiden, mit Olivenöl, gehacktem Knoblauch, Salz, Pfeffer und Kräutern vermengen. Auf ein Backblech geben und ca. 20 Min. backen.

  3. Lachsfilets mit Salz, Pfeffer und Zitronensaft würzen, auf das Gemüse legen und weitere 12–15 Min. im Ofen garen.

  4. Mit frischen Kräutern bestreuen und servieren.


👉 Tipp: Für extra Knusper kannst du den Lachs am Ende kurz unter den Grill legen.
