Gegrilltes Hähnchen mit Quinoa-Salat

Zutaten (2 Personen):
2 Hähnchenbrustfilets (je ca. 150 g)
120 g Quinoa (roh)
1 Gurke
2 Tomaten
½ rote Zwiebel
1 Bund Petersilie
1 EL Olivenöl
½ Zitrone (Saft)
1 TL Paprikapulver
Salz, Pfeffer
Zubereitung:
Quinoa in einem feinen Sieb waschen und in doppelt so viel Wasser mit einer Prise Salz ca. 15 Min. köcheln lassen. Danach abgießen und abkühlen lassen.
Hähnchenbrust mit Olivenöl, Paprikapulver, Salz und Pfeffer marinieren. In einer Grillpfanne oder auf dem Grill von beiden Seiten ca. 5–6 Min. grillen.
Tomaten, Gurke und Zwiebel fein würfeln, Petersilie hacken. Mit Quinoa mischen. Zitronensaft und Olivenöl dazugeben, mit Salz und Pfeffer abschmecken.
Hähnchen in Scheiben schneiden und mit dem Quinoasalat servieren.
👉 Tipp: Für mehr Aroma kann man das Hähnchen vorab 1 Stunde in Knoblauch-Zitronen-Marinade einlegen.
