Gebratene Forelle mit grünem Spargel & Zitronensauce

Zutaten (2 Personen):
2 Forellenfilets
250 g grüner Spargel
1 EL Olivenöl
½ Bio-Zitrone (Saft + Abrieb)
50 ml Gemüsebrühe
1 TL Butter
Salz, Pfeffer
Zubereitung:
Spargel waschen, holzige Enden entfernen. In Olivenöl ca. 5–6 Min. anbraten.
Forellenfilets salzen, pfeffern und in einer zweiten Pfanne 3–4 Min. pro Seite goldbraun braten.
Sauce: Zitronensaft, -abrieb und Brühe in die Fischpfanne geben, kurz aufkochen, Butter unterrühren.
Forelle mit Spargel und Sauce servieren.
👉 Tipp: Dazu passt ein kleiner Quinoasalat als Beilage.
