Gefüllter Kürbis mit Quinoa & Feta

Zutaten (für 2 Portionen):
1 kleiner Butternut oder Hokkaido (ca. 800 g)
100 g Quinoa
100 g Feta
1 Zwiebel
1 Knoblauchzehe
2 EL Olivenöl
2 EL Kürbiskerne
1 TL Thymian
Salz, Pfeffer
Zubereitung:
Kürbis halbieren, Kerne entfernen. Innen leicht salzen und 20 Min. bei 180 °C im Ofen vorbacken.
Quinoa nach Packungsanleitung kochen.
Zwiebel & Knoblauch in Öl anschwitzen, Quinoa und zerbröckelten Feta untermischen. Mit Thymian, Salz und Pfeffer würzen.
Kürbishälften damit füllen, mit Kürbiskernen bestreuen und weitere 20 Min. backen.
