Hähnchenbrust aus dem Ofen mit Ratatouille

Zutaten (2 Personen):
2 Hähnchenbrustfilets
1 Zucchini
1 Aubergine
1 rote Paprika
2 Tomaten
1 kleine Zwiebel
2 Knoblauchzehen
2 EL Olivenöl
1 TL Thymian oder Rosmarin
Salz, Pfeffer
Zubereitung:
Backofen auf 200 °C vorheizen.
Gemüse in Stücke schneiden, Knoblauch und Zwiebel fein hacken. Alles mit Olivenöl, Salz, Pfeffer und Kräutern vermischen und in eine Auflaufform geben.
Hähnchenbrüste darauflegen, leicht würzen.
Im Ofen ca. 30–35 Min. backen, bis das Huhn durchgegart ist.
👉 Tipp: Wer es saftiger mag, kann die Hähnchenbrust vorher kurz anbraten.
