Mediterraner Quinoasalat mit Kichererbsen, Rucola & Oliven

Zutaten (2 Personen):

  • 100 g Quinoa

  • 150 g gekochte Kichererbsen (oder aus der Dose, abgespült)

  • 1 Handvoll Rucola

  • 10 schwarze Oliven

  • 1 rote Paprika

  • 1 kleine rote Zwiebel

  • 2 EL Olivenöl

  • ½ Zitrone (Saft)

  • Salz, Pfeffer

Zubereitung:

  1. Quinoa waschen, in doppelt so viel Wasser ca. 15 Min. garen, dann abkühlen lassen.

  2. Paprika und Zwiebel klein schneiden, Oliven halbieren.

  3. Quinoa mit Kichererbsen, Rucola, Gemüse und Oliven vermischen.

  4. Mit Olivenöl, Zitronensaft, Salz und Pfeffer anmachen.


👉 Tipp: Schmeckt auch super als Meal-Prep-Salat für unterwegs.
